Recipe by Marc Cardinali. From Cluck & Squeal.

Prep: 15 min
Cook: 45 min
Serves: About 6 cups (2 lb nuts)
Cook temp: 300°F / 150°C
Method: Oven
Ingredients
- 2 lb mixed nuts (pecans and cashews are best; almonds and walnuts work too)
- 1½ tbsp Cluck & Squeal All Purpose Seasoning & BBQ Rub
- 1 cup white sugar
- 1 tsp cinnamon
- ½ tsp or more Cluck & Squeal Tasty Hot (optional, but not for us!)
- 1 tbsp water
- 1 egg white
Directions
1. Mix the Coating
In a small bowl, mix the sugar, cinnamon, All Purpose and Tasty Hot (if using) with a fork or whisk.
2. Coat the Nuts
In a large bowl, whisk the egg white and water until frothy with soft peaks. Add the nuts and toss to coat, then add the dry mix in stages, mixing well for a thorough coating.
3. Bake & Stir
Preheat the oven to 300°F / 150°C. Spread the nuts on 2–3 parchment-lined baking sheets and bake for 45 minutes, stirring every 15 minutes with a dampened wooden spatula.
4. Cool & Serve
Remove from the oven and let the nuts cool to room temperature. Serve and enjoy!
Tips & variations
Scale it up. Double or triple everything for larger batches.
Mix your nuts. Pecans and cashews are best, but almonds and walnuts work well too.
